When the mornings begin to cool but pumpkin season still feels a little early, apples are the natural place to start. Their familiar sweetness suits the first cinnamon-scented bake of the year without making the calendar jump too far ahead.

A loaf cake is especially right for this in-between moment. It asks less than a layered cake, needs no elaborate decoration, and feels equally at home beside morning coffee or on a dessert plate. Its narrow shape gives every slice a tender center, browned edges, and a strip of crunchy topping.

This version combines brown sugar, grated apple, Greek yogurt, almond flour, and pecan streusel. It is softly spiced, moist without feeling dense, and sweet enough without frosting.

Why This Loaf Works

Four Details That Protect the Texture

The difference between a plush apple loaf and a heavy one comes down to moisture, temperature, and mixing. None of the steps are difficult, but each one prevents a common problem before the pan reaches the oven.

Serving, Storing, and Seasonal Swaps

Apple Pecan Loaf Cake Recipe

For the pecan streusel

  • 60 g all-purpose flour
  • 50 g brown sugar
  • ½ teaspoon ground cinnamon
  • ½ cup pecans, finely chopped
  • ½ teaspoon fine salt
  • 3 tablespoons cold butter, cut into small cubes

For the apple cake

  • 200 g all-purpose flour
  • 40 g almond flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon fine salt
  • 1½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ cup butter, softened to room temperature
  • 200 g brown sugar
  • 2 large eggs, at room temperature
  • ⅓ cup Greek yogurt, at room temperature
  • 2 Gala apples, grated and gently squeezed to remove excess juice

Method

  1. Combine the streusel flour, brown sugar, cinnamon, pecans, salt, and cold butter. Press the butter into the dry ingredients with your fingertips, leaving some large crumbs. Refrigerate while preparing the batter.
  2. Heat the oven to 350°F (175°C). Line a standard loaf pan with parchment, leaving enough overhang to lift out the cake.
  3. In a medium bowl, whisk together the all-purpose flour, almond flour, cinnamon, ginger, nutmeg, salt, baking powder, and baking soda.
  4. Beat the softened butter and brown sugar for 3–4 minutes until pale and fluffy. Mix in the eggs one at a time, followed by the yogurt and vanilla.
  5. Mix in the dry ingredients only until no flour remains. The batter will be thick. Fold in the grated apple by hand.
  6. Spread the batter in the pan, add the chilled streusel, and bake for 55–60 minutes, until a tester comes out without wet batter.
  7. Let the loaf stand in the pan for 5–10 minutes. Lift it out with the parchment and cool on a rack before slicing.
