Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1 shallot, finely chopped
  • 4 garlic cloves, finely chopped
  • 1 teaspoon dried oregano
  • 1–2 teaspoons crushed red pepper flakes
  • 1/2 cup tomato paste
  • 1/4 cup vodka
  • 3/4 cup basil pesto, homemade or store-bought
  • Kosher salt and freshly ground black pepper
  • 1 cup heavy cream or canned coconut milk
  • 1 pound short-cut pasta
  • 3 tablespoons salted butter
  • 1/3 cup grated Parmesan, plus more for serving
  • 1/4 cup roughly chopped fresh basil, plus more for serving

Method

  1. Heat the olive oil in a large skillet over medium-low. Add the shallot, garlic, and oregano; cook for about 5 minutes, until the shallot begins to caramelize.
  2. Turn the heat to low and work in the tomato paste and red pepper flakes. Stir for 4–5 minutes, until the paste darkens and begins to cling to the pan. Pour in the vodka and let it bubble gently for 2 minutes. Blend in the pesto and cream, season to taste, and leave the sauce over the gentlest heat.
  3. Meanwhile, bring well-salted water to a boil in a large pot. Cook the pasta just until al dente, using the package timing as a guide. Scoop out 1 1/2 cups of the starchy water, then drain.
  4. Add the pasta, 1/2 cup reserved water, and butter to the sauce. Toss until the butter melts. Add the Parmesan and basil, thinning with more pasta water as needed.
  5. Divide among bowls and finish with extra basil, Parmesan, and black pepper. Serve hot.
